Black Beans and Quinoa
Black Beans and Quinoa
1 can black beans no salt added (do not drain) 
2 cups cooked quinoa
1 Tbsp olive oil
1 small onion, chopped
½ red bell pepper, chopped
3 cloves garlic, chopped
1 Tbsp light soy sauce
1 tsp oregano
1 tsp paprika
1 tsp cayenne pepper (optional)
A pinch of salt and pepper
½ cup fresh cilantro, chopped
Sauté the chopped onion and red pepper in the oil. Add the garlic. When the mixture starts to brown, add the beans, the bean liquid, the soy sauce and spices. Cook on medium heat until some, but not all of the liquid evaporates. Finally add the rice, mix together and remove from the heat. Add cilantro before serving.
